What Is Kohlrabi?
This cruciferous vegetable – also known as turnip cabbage or German turnip – is a cousin to broccoli, cabbage and cauliflower. It has a bulbous base, green or purple, crunchy and mildly sweet flesh, and looks a bit like a cross between a cabbage and a radish. Though less immediately recognizable than its cousins, kohlrabi is extremely versatile, eaten raw or cooked dish.

Kohlrabi Soup Recipe
Ingredients:
- 2 medium kohlrabi bulbs, peeled and chopped
- 1 large onion (chopped)
- 2 cloves garlic (minced)
- 1 medium potato (optional for creaminess, peeled and chopped)
- 4 cups vegetable (or chicken) broth for extra flavor
- 1 cup coconut milk/or heavy cream (for creaminess)
- 2 tablespoons olive oil
- 1 teaspoon dried thyme or rosemary
- Salt and pepper to taste
- Fresh herbs for garnish (optional: parsley or chives)
Instructions
1 Sauté the Aromatics:
- Heat 2 tablespoons of olive oil or butter in a large pot over medium heat.
- Add the diced onion and minced garlic. Sauté for 4-5 minutes until the onions become translucent and aromatic.
2 Cook the Kohlrabi:
- Add the chopped kohlrabi to the pot and stir occasionally. Cook for about 5 minutes to soften it slightly.
3 Simmer the Soup:
- Pour in the vegetable or chicken broth. Bring the soup to a boil, then reduce the heat to low. Let it simmer for 20-25 minutes, or until the kohlrabi is tender and easily pierced with a fork.
4 Blend to Perfection:
- Use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a blender and blend until velvety.
5 Finish the Soup:
- Stir in 1 cup of cream or coconut milk for a luscious texture. Season with salt and pepper to taste, and heat through for 2-3 more minutes.
6 Serve with Style:
- Ladle the soup into bowls, garnish with fresh herbs like thyme or parsley, and serve immediately for a delightful, comforting meal.
